  • 500g beef (stew beef or chuck), cut into chunks
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 1 red bell pepper, chopped
  • 1 cup long-grain rice (like basmati)
  • 3 cups beef broth (or water)
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper, to taste
  • Fresh parsley, for garnish
  • 1 small chili pepper (optional)
  • Tomato, diced (optional, for garnish)

Directions:

  1. Brown the Beef
    Heat olive oil in a large pot over medium-high heat. Add the beef and brown on all sides. Remove the beef and set it aside.
  2. Cook the Vegetables
    In the same pot, add the onion, carrots, and bell pepper. Cook for 5 minutes, stirring occasionally. Add the garlic, cumin, paprika, and ground coriander. Stir for another minute until the spices are fragrant.
  3. Cook the Rice
    Add the browned beef back into the pot, followed by the rice. Stir everything together so the rice is coated in the spices and oil.
  4. Add Broth
    Pour in the beef broth (or water), and season with salt and pepper. Bring it to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, until the rice is tender and the liquid is absorbed.
  5. Rest and Fluff
    Take the pot off the heat and let it sit for 5-10 minutes. Fluff the rice with a fork, mixing everything together.
  6. Serve
    Garnish with fresh parsley and a few diced tomatoes for freshness. Add a sliced chili pepper if you like some heat.
