Directions:

  1. Preheat Oven and Prepare Baking Sheets:
  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats for easy cleanup.
  1. Make the Dough:
  • In a large mixing bowl, cream together the softened butter and powdered sugar using a hand mixer or stand mixer until smooth and fluffy.
  • Add vanilla extract and mix until combined.
  • Gradually add the flour and salt (and cornstarch if using), mixing until the dough comes together. It should be soft but not sticky.
  1. Shape the Cookies:
  • Roll dough into 1-inch balls and place them on the prepared baking sheet.
  • Use your thumb (or the back of a spoon) to press a small indentation in the center of each cookie.
  1. Add the Jam:
  • Fill each indentation with a small spoonful of jam. Be careful not to overfill, as the jam will spread during baking.
  1. Bake:
  • Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden brown.
  • Remove the cookies from the oven and allow them to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
